Txakoli
Txakoli from the Basque Country is a slightly sparkling, bone-dry, high-acid white with only around 10–11% alcohol. It is poured from height to create a slight froth and is one of the most genuinely refreshing wines you can drink in summer. Unusual, hard to find in supermarkets, but worth seeking out at a good wine merchant.
